Hello, and welcome back to Cooking with Kotsanis. We're headed into cooler weather. We're at the end of September, we're moving into another discussion of cancer, except we're doing a little bit of a twist this time. On October 16th, Kotsanis Institute is going to be delving into the topic of cancer and celebrity cancer treatments, all of the treatments and the preventative measures that many celebrities have used in their fight against cancer. So you're going to learn all about that on October 16th so get your RSVP in today.
Megan:
I'm so excited that we're headed into fall because that means the return of chili, the old fall standard. Except we're going to be sharing a little bit healthier version of that. And so the recipe for today is a sweet potato chili, and I'm so excited about it. You should be excited. And here's your ingredient list.
Megan:
I have already prepped my ingredients. So we're going to start by bringing our burner to about a medium heat. And we're going to start with sauteing our onions and our peppers. So I'm going to saute this until the onions turn translucent. Okay. Once these are translucent, you're going to add the chili powder. Now I am using chicken broth, but of course, you can make this a vegan option by just using vegetable broth. That's what it calls for in the recipe, actually. It's a great substitute. One bay leaf. And this is where you'll add your sweet potatoes. You're going to bring this all to a boil and get these sweet potatoes nice and tender.
Megan:
Okay. I think enough time has passed by. And yes, my sweet potatoes are nice and tender. Now really important to pull out the bay leaf. I tend to always forget to do that. Okay. And now that those potatoes are tender, we're going to add the rest of the ingredients. So toss in your kidney beans, your lentils. And gosh, lentils are just so good for you. The chocolate chips. And your tomato paste. Now, all of this stuff is going to simmer together. These flavors have got to really meld together. So probably about a half hour would be the best, depending on what kind of time you have. Now, experts agree that a diet very high in fiber is really going to do quite a lot to prevent many different types of cancers. And this is really just so full of it, among so many other nutritional benefits.
Megan:
It's true. The beans and lentils are high in folate, which help to keep cells from mutating into cancer cells. Plus, the fiber helps prevent all kinds of digestive cancer.
Megan:
Okay. So this has simmered, it has melded together all of the flavors, and I think it's going to be excellent. So put it out on our plate. A couple of garnishing options that you have are I have chopped up some cashews here. You could also do peanuts. You can also do cilantro. And I am doing a spray of avocado. Isn't this beautiful?
