Welcome to cooking with Kotsanis. A one of a kind cooking show that brings the wisdom of Hippocrates to the 21st century. I'm Megan. Join me as I share organic and gluten-free recipes that use food as medicine for your body. Now grab your fork and take control of your health.

Megan:
Hello, and welcome back to cooking with Kotsanis. My name is Megan, and during the month of September, we're talking about seasonal allergies. This week, I'm sharing a recipe for a red cabbage and green apple sesame salad. And there are couple of ingredients that are really going to help you allergy sufferers. Here is your ingredient list so we can get started on the salad.

Megan:
Foods that are richly colored, like apples and cabbage, contain antioxidants known as flavonoid that act as natural anti-histamines. These foods are helpful for reducing swelling in the sinuses and reduce congestion that causes headaches and stuffy noses.

Megan:
So now that we have everything chopped and shredded, I'm just going to throw together the dressing. It is really super simple. Just combine all of these ingredients, the tahini, the maple syrup. Oh, this is going to be so good. Sesame oil, vinegar, water, and salt. And mix that together. Super simple. Right?

Megan:
Okay. Now that you've got all of your ingredients ready, we're just going to combine them. Just put in your cabbage and your apples. Now with this recipe, you want to work kind of quickly, or your apples are going to start turning brown. Just put that in there and your hip seeds. And mix all of that together.

Megan:
This already smells so great and it's going to make a beautiful side dish. I'm going to put it out in this clear container and you'll be able to see how. Now the thing about Kotsanis Institute is that for acute conditions, medication is absolutely really good for you. But where Kotsanis Institute sort of bridges the gap is that we try and make it so that you can depend less upon medications and more upon the food that you give your body every single day. To get to know the Kotsanis Institute a little bit better, come to one of our free lunch and learn events. You can find our event list on our website www.kotsanisinstitute.com or you can call the number below. In the meantime, thank you for joining me. We'll see you back here next week. Take care and be healthy.
