Hi, I'm Megan with Kotsanis Institute. Today we're talking about cauliflower. Cauliflower is great because it's really just lots of clumps of thousands of little flowers. I like to think of it as the maintenance tool, because it keeps several of your body's systems running the way they're supposed to. It is about 25% protein, so it's a good compliment to what else is on your plate. It's also high in vitamin C, folic acid and potassium. Folic acid is what helps your body to make and maintain cells, as well as breakdown and convert the food that you eat into energy. Potassium, to make a long story short, keeps your body's electric system running freely and without glitches. That's why low potassium levels are tied to muscle cramps, and even in severe cases, to irregular heartbeat.
